Deep Dish Pizza Dough
Thick pizza deserves love too
Making pizza at home from scratch is one of the more rewarding #homecooking experiences I can think of. Deep Dish Pizza Dough seems like a big undertaking, but honestly it’s no more difficult than my really easy pizza dough.

Very easy. Mix. Sit back. Relax.
The biggest difference here between deep dish pizza dough and normal dough is basically quantity of yeast. In baking a deep dish pizza, you’ll line a cast iron pan (or equivalent/cake pan, etc) with your dough, with cheese on the bottom to create a nice crisp bottom with gooey, stringy cheese with the rest of the toppings on top. I also like to sprinkle some cheese on the top as well, but I’m sure that’s kosher with Chicagoans. …but what do I know. I’m not a baker, not a chef and I’m not from Illinois.
This recipe is effectively identical to my really easy pizza dough, but with double the yeast. This helps the dough puff up, not only during rising at room-temperature, but during baking as well.

Deep dish pizza dough recipe
Equipment
- Kitchen Mixer (optional)
Ingredients
- 1½ cup warm water
- 2 tsp dry active yeast
- 4 cups all purpose flour
- 3 tsp salt
- 2 tsp sugar
- 1 tbsp olive oil optional
Instructions
- In a bowl or saucepan, mix water, yeast and sugar and let sit until it becomes foamy, approx 5 minutes.
- In a large mixing bowl, add flour, salt (and oil) and mix until and mix with water/yeast mixture.
- If using a kitchen mixer, use dough hook and run until dough becomes fully mixed and smooth. If by hand, mix with spoon/spatula until becomes rough, cohesive unit and then move to cutting board or countertop and kneed by hand until smooth, not tacky. Add extra flour or water as required.
- Dust with flour, set aside for 1-2 hours (until doubled in size).
- Once ready to bake, cut in half (designed for a 2-pizza batch) roll or stretch out dough in pan, load with cheese, sauce and toppings and bake for 25-30 minutes in a preheated oven at 425°F/218°C until golden brown and/or crispy.
