Pulled Rib Sesame Zucchini Stir Fry
MAKING LEFTOVERS GREAT AGAIN
As you know, I am truly resourceful when it comes to cooking and I absolutely love making fusion creations. Part 3 of “leftovers made great again”: this simple stir fry consisting of (the title kinda gave it away, eh…) pulled rib (leftovers), zucchini, bell pepper, onion and seasoning. To continue the theme using your original creation leftovers to make even better and tastier original creations. Of course, there’s little chance you would eat this dish on its own, this might be one of the easiest dishes you can just “throw together” in a few quick minutes. This Pulled Rib Sesame Zucchini stir fry is the perfect main or side dish for an Asian-fusion meal or, better yet, a #HOMECOOKEDFEAST!
LEFTOVER INGREDIENTS TO THE RESCUE
Let’s paint the picture. It’s Tuesday night and you get home from work. Some fresh items in the crisper and some scraps of that leftover [whatever] from your last lazy trip to Costco or Safeway… do you reach for the phone/computer and order take-out? It’s a 49 minute wait for delivery.
You have leftover and fresh ingredients in the fridge, so I wouldn’t be a very compelling DIY food blogger if I encouraged you to order in. …just be creative!
All you’ll need for this delicious makeshift dish is:
- Leftover ribs or tender pork
- Handful (or two) of zucchini (whole)
- Handful of chopped bell pepper (red gives it a nice pop of colour)
- White or yellow onion
- Maybe a couple other things (oil, soy sauce, salt & pepper, garnish)
And then you just go from there and fry it up!
Pulled Rib Sesame Zucchini Stir Fry
Equipment
- Small wok or frying pan
Ingredients
- ½ cup pulled ribs pre-cooked/leftover
- 1 cup zucchini cut like thick disks
- ½ cup red bell pepper (or whatever colour)
- ½ cup onion thin sliced, vertically
- 1 tbsp cooking oil
- 1 tbsp oyster sauce
- ½ tbsp sesame oil
- soy sauce to taste
- salt and pepper to taste
- sesame seeds garnish
- green onion and/or cilantro garnish
Instructions
- During prep, remove all meat from 4-5 pork back or baby-back ribs, finely chopped, all bone and hard-bits removed.
- Preheat pan to med-high heat. Heat cooking oil, save sesame oil.
- Add onions and zucchini. Add in peppers 2-3 minutes later, once zucchini has softened up in the flesh, but skin/outside still hard (but not crisp/crunchy)
- Stir in sesame oil and oysters sauce. Flavour with soy sauce, to taste.
- Remove from heat. Garnish and serve.
- Enjoy!
