Al Pastor Sauce
I’m all about taking shortcuts when cooking at home. Cooking so many different styles of food means using ingredients that aren’t PERFECT, but that do the trick 100%. If can’t make it perfectly, try this imperfect Al Pastor Sauce!
Here are couple of hacks for making some “pretty close” Al Pastor Sauce.
Simple Al Pastor Sauce Ingredients
- 1 cup fresh pineapple
- 1 ½ jalapeno
- 1 tomato, fresh
- 1 juice full lime
- 1 tbsp salt
- 2 tbsp Piloncillo. (Substitute cane sugar or palm sugar)
- 4 tbsp “achiote” sauce (see below)
Achiote
- 1 tsp oregano for achiote
- 2 clove garlic for achiote
- ½ tsp cumin for achiote
- 2 tbsp paprika for achiote (more for more red colour)
- ¼ cup cider vinegar for achiote
Then try it on one of these delicious dishes!

“Al Pastor” Sauce/Salsa Al Pastor
Fake it 'til you make it Al Pastor! When you want to spice up your ribs, chicken or taco meat, try this simple "AL PASTOR" recipe with all the substitutions!
Equipment
- Blender/Food Processor
Ingredients
Fake Al Pastor Sauce
- 1 cup fresh pineapple
- ½ jalapeno
- 1 tomato fresh, whole or diced
- 1 lime full, juiced
- 1 tbsp salt
- 2 tbsp piloncillo (substitute cane sugar, raw sugar or palm sugar if not available)
- 4 tbsp achiote sauce (see below for fake achiote)
"Achiote" Sauce
- 1 tsp oregano
- 2 clove garlic diced
- ½ tsp cumin
- 2 tbsp paprika for red colour
- ¼ cup cider vinegar
Instructions
- Combine all ingredients into a food processor.
- Blend until consistency is smooth.
- Use immediately on your favorite meats or store covered, refrigerated for up to 5-7 days.
Notes
Achiote is a paste that is derived from seeds of evergreen tree and is also used for colour. If you don’t have the kicking around, create one using below much simpler ingredients!
