Recipe for quick-pickle Sunomono cucumber salad

Sunomono salad for the win! This easy quick-pickle cucumber salad is easy, delicious, and basically impossible to mess up!

The key to creating a #homecookedfeast is: many dishes! So, the easiest way to turn your meal into a feast is MORE DISHES! How to make more easy dishes you ask? Accompaniments! Sunomono, Japanese-style quick-pickle cucumber salad is one hell of an easy way to get there!

If you’re afraid of branching out and trying new things, admittedly, this entire website probably isn’t for you… but if you are, LET’S GO!

So easy a monkey could make it

…Assuming your monkey can use hand tools or knives! It’s funny, too, that I would title this post “easy sunomono”, as it’s nearly impossible to mess this one up…and by default HAS to be easy.

You’ll need two items to build this accompaniment to your Asian feast.

  1. Bowl
  2. Mandolin (or a sharp knife, great precision and a lot of time)
  3. Optional cutting board

The bowl is for placing under your mandolin cutting tool. Alternatively, slice everything onto a cutting board and then tediously slide them into the bowl later. I’ll admit that it is somewhat more stable holding the mandolin on an angle on a flat surface, but in the interest of time and cutting out a step, just slice everything straight into the bowl. However, if you option the knife, you should probably consider the cutting board… it’s hard to slice cucumber while holding it in the air ;).

Ingredients are simple too!

  • Cucumber or mini-cucumbers
  • Rice vinegar
  • Sugar
  • Salt
  • Sesame oil
  • Sesame seeds (optional)
  • Chili flakes/crushed (or finely diced jalapeno/serrano/thai chili)

Sunomono – Cucumber Salad

Best accompaniment for any Asian Style #homecookedfeast. Simple process with simple ingredients to add a healthy side dish in just a few short minutes.

Equipment

  • Mandolin

Ingredients
  

  • 1 cucumber Or 5 mini cucumbers
  • 2 tbsp rice vinegar
  • 1 tsp sesame oil
  • 1 tsp sugar white or brown, to taste
  • ½ tsp salt to taste
  • chili flakes (or other chili) – to taste
  • sesame seed garnish

Instructions
 

  • In small to medium sized bowl, mix together rice vinegar, sesame oil, sugar, salt, until salt and sugar are dissolved into solution.
  • Carefully slice, using knife or mandolin, one full cucumber or 4-6 mini cucumbers (one bowl worth), either directly into the bowl or onto a cutting board.
  • Mix cucumbers into the vinegar solution. Add crushed chilis to taste.
  • Your salad is ready to eat now, but best to let it marinate for a few minutes and let the acid of the vinegar penetrate the cucumber pulp.
  • Garnish with fresh sesame seed and serve!

Notes

KEEP FOR LATER: This can easily be covered and stored in the fridge for several days. Use your discretion based on how the cucumbers look (they are pickles now!) 
PRICE JOKE: I laughed a little as I was typing out the price of this recipe. If you can find crazy inexpensive cucumber, this can easily be $1, but everyone seems to be talking about “inflationary pressures” on food these days… that’s a conservative/max price up there. I recently paid $4.50 for a 3-pack..not too shabby. Total costs come in around $1.80 as everything other than cucumber is basically free.
