One-day Mexican Pickled Vegetables
I made a BBQ feast with my chef brother once upon a time. He introduced me to this, the easiest one-day Mexican-style Pickled Vegetables I have ever had. Definitely not authentic Mexican, but they are the perfect addition to any BBQ meal. Super good!

This delicious side was part of a huge smoked meat fest/BBQ feast and I had almost everyone asking how to make it. It’s literally the easiest one-day pickling I’ve ever done.

- Smoked Al Pastor Ribs.
- Al Pastor smoked pork belly mini soft tacos.
- Cajun garlic rub chicken quarters.
- Smoked italian sausage.
- Smoked corn on the cob.
- Purple cabbage pineapple coleslaw.
- Mexican pickled carrots, onion and jalapeño.
- Spicy Cucumber and thai chili sunomono.
- Green bean pineapple and sweet onion salad.
- Broccoli cranberry salad.
- Cilantro cumin black bean rice.
- #homemade pico de gallo
- Mini flour tortillas
SPICY CARROTS?
I loved these carrots and onions so much I was eating them for a week straight out of the container, but I will confess that two of my guests did cough while eating the pickles, claiming they were toooooooo spicy. Despitethe fact that they were wrong, I will admit they they were quite spicy.
With very simple ingredients, including: 3 carrots, 1 onion, 1 jalapeño, garlic, vinegar, sugar and salt, one of the best parts is that it is totally scalable, totally adjustable for spice and best of all, only needs 4-6 hours to be super tasty.
One Day Mexican Pickled Vegetables
Equipment
- Jar or container
Ingredients
- 3 carrots thinly sliced
- 1 sweet onion diced
- 1 jalapeno sliced
- 4 cloves garlic sliced or diced
- 1 cup vinegar white, rice or cider
- 1 tbsp sugar
- 1 tsp salt
Instructions
- In a water-tight jar or container, dissolve sugar and salt into vinegar.
- Add sliced, diced and chopped vegetables and garlic into vinegar mixture.
- Mix well so that all vegetables are submerged in vinegar solutions.
- Let pickle for 4-6 (or more) hours.
- Serve as a fresh, spicy side to any BBQ #homecookedfeast!

Don’t think too hard
Give these one-day Mexican pickled vegetables a shot.
I listed really 3 main ingredients in this, but the reality is you can pickle whatever you want. If you want to toss in some cucumber, tomato….go for it! The more the merrier and this is totally scalable. Just make sure you have enough coverage in your jar and adjust timing accordingly.
