Jump to Recipe4 Ingredients (and garnish)
With just 4 simple ingredients (5 if you count two different cuts of green onion), this is a crisp, fresh and vibrant side to accompany any Asian main dish.
I threw this together the other day for a nice add-onto my pork tenderloin – reached into the crisper and found snap peas, bean sprouts, garlic and green onion. Nice and easy and as long as you don’t overcook, you’ll also maintain that beautiful crunch that comes along with fresh vegetables.
Soy sauce, garlic and sesame are the big flavours in this one. All winners!
As with all stir-fries, of course, add, subtract or substitute anything you might have in your fridge or pantry! In writing this, I realize this would also be super good with baby corn or bamboo shoots.
If I can invent something like this, you can too!
Snap Pea Stir Fry
Equipment
- Wok or skilldet
Ingredients
- 2 cup snap peas washed and snipped
- 1 cup bean sprouts
- ½ cup green onion greens
- 1 tbsp garlic chopped
- 1 tsp sesame seeds garnish
- 1 tbsp green onion garnish, angle chopped
- 1 tbsp sesame oil
- 1 tbsp cooking oil
- 2 tsp soy sauce
- salt and pepper to taste
- crushed chili pepper to taste, optional
Instructions
- Preheat small wok or skillet over medium heat. Add cooking oil for full coverage of pan surface. 1-2 minutes.
- Add snap peas and bean sprouts, fry for 3-4 minutes. Add sesame oil, soy sauce and any optional ingredients or add-ins.
- Add garlic and green onion greens (save green onion whites for garnish). Fry for 2-3 minutes.
- Remove from heat. Garnish. Serve. Enjoy!
Notes
Timing is everything in this one. Keep all your ingredients crispy and vibrant by ensuring you don’t overcook your greens! While some vegetables can be kind of temperamental, these guys are generally pretty forgiving. Have fun with it!
