Homemade Corn Salsa

Don't like tomatoes or just don't have any? You're in luck - some pico de gallo style corn salsa!

Ingredients
  

  • 1 cup chopped corn fresh/cooked or frozen
  • 1 tbsp red onion finely minced
  • 1 tbsp cilantro finely chopped
  • 1 ½ tsp korean red pepper powder
  • ½ lime juice
  • 1 tbsp olive oil
  • ½ tsp salt
  • ½ tsp black pepper
  • ½-1 tsp garlic minced, fresh

Instructions
 

  • Mix corn, red onion, cilantro, garlic in a small-medium sized bowl.
  • Mix in red pepper powder, oil, lime juice and salt and pepper, to taste
  • Garnish and enjoy!
